The Polish "delfin" comes straight from Greek δελφίς (delphís), genitive δελφῖνος (delphínos), the word for a dolphin. The same root named the oracle at Delphi and the constellation Delphinus in the northern sky. The meaning here is literal. A delfin is a dolphin, in Polish and in the Greek it descends from.
That plain sense travelled. Medieval French turned the dolphin into "dauphin," the title of the heir to the throne. It began with Guigues IV of Vienne, nicknamed le Dauphin because he bore dolphins on his coat of arms. A sea animal became a royal word in one country and stayed an animal in another.
